Tribute's Vanilla-Scented Sweet Potato Puree



Yield: 2 Quarts

Ingredients    Amounts
Sweet Potatoes   2 Large

• Roast potatoes in 350f oven until very soft, about an hour.
• Allow potatoes to cool slightly, peel.


Vanilla Bean, split    1 - bean
Butter     8 oz.

• In a sauce pot cook the butter and the vanilla over a low flame until the butter turns a light tan color, about 15 minutes. Remove the bean.


Brown Sugar    4 tbsp.
Kosher Salt    2 tsp.

• Place a cooked potatoes, 2 tbsp sugar and 1 tsp. salt in a food processor fitted with a medal blade. While the machine is running, pour in half of the browned. Follow the same process the remaining potato.
