Pumpkin Pecan Pie




"An easy and delicious recipe, especially for people that think they don’t like pumpkin pie." - Teddi

3 eggs, sllightly beaten
1 cup canned pumpkin
1 cup sugar
½ cup dark corn syrup
1 teaspoon vanilla
½ teaspoon cinnamon
¼ teaspoon salt
1 cup chopped pecans
1 8-inch pastry shell, unbaked
Whipped cream or ice cream for topping, optional 

Combine eggs, pumpkin, sugar, corn syrup, vanilla, cinnamon and salt.  Mix well.  Pour into unbaked pie shell.  Top with pecans.  Bake at 350 degrees for 40 minutes or until knife inserted in center comes out clean.  Chill.  Serve with whipped cream or ice cream if desired.
